Barefoot I'm 5' 11" with a 30 inseam. The regular size is recommended for people who are 5' 3" to 5' 10" with a standover height of 31.14 inches, and the large size is recommended for people who are 5' 10" to 6' 4" with a standover height of 32.59 inches.

We just bought the smaller Soltera 7 for SO. I have the Level.2 regular high-step and I'm 5'10. She's 5'4 so the step-through worked for her.
It might be worth checking local bike shops around you that sell Aventons to ask for a test ride.
I'm not sure where you're seeing those size ranges, on their site it shows that the larger model should fit you just fine.

When dealing with comedy sizing it's probably better to go with the large.
ETA: You could always swap in a shorter stem if needed.
