Given the circumstances, if Sansa has children them taking her name would be likely (at least for whichever one is looking to inherit Winterfell, if a sibling is inheriting their father's lands instead they might use his name).

That said the vibe I got from the ending is that Sansa has no intention of ever marrying again.

Why? It's not a stage play, and the characters aren't British. There's no reason that other professional screen actors couldn't do a good job with it.

Will whoever they cast end doing a good job, and will the rest of the production be good enough for the quality of the acting to matter? Who knows, but the conditions you want to set are not a requirement.

Unfortunately for them, they're on the wrong side of the continent for that, and thus have a very long journey to undertake to raid anywhere outside of the seven kingdoms. Which in turn makes it unlikely they'd be able to do so enough to keep the culture for it alive.
