I've only encountered two 8s in my whole minesweeper 'career' of almost 10 years.
An despite hardly playing any easy, I've had a couple of two click finishes already. Which makes me believe that if I would play only easy, I would encounter a one click finish from time to time.
Little sidenote: Minesweeper is not the only thing I play, but definitely a go-to timekiller when I am bored.
