Pepperoncini and banana peppers are similar. Banana peppers are more pointed on one end and less spicy. Pepperoncini are rounded on the end and are more spicy.

It's just my process. I put these into the freezer except for the first one. I move them to an oiled container when I go to put them on the counter. It was about four and a half hours on the counter before I stretched the dough.
