I worked as a cook at a place that made fried rice. Dozens of batches a day and I always cracked them on the rim of the wok. I'd get a few dribbles of goop on the outside, but it was always a perfectly clean break. In fact, I think the hard, thin edge of the wok might be the case study in how a narrow edge makes a cleaner break since even using a bowl seems to create more fragments.

PC rice is perfect. Rice in g x 1.15 in water. High for 4, natural release. Sticking is minimal and cleaning is as simple at pouring in a little water, lidding it, and letting the residual heat steam up.
