I believe it was more in the 650k range. I found the listing.

It's not just low wage workers demanding better pay. It's also well paid people taking time off.
My husband and I both quit our jobs after a year of working from home. We have young kids, and the pandemic has made us question grind culture and the conventional wisdom that we need to stockpile as much money as possible. I think the pandemic has shown us that time is a more valuable resource than money.

Recently I can't deal with Tiffany's veneers. They're just so big for her mouth.

Your priority needs to be protecting YOU in this situation. Your FMIL doesn't have any legal standing - she can't coerce you into having/not having kids, that's illegal. She can't force you to pay for a wedding when it's all in her name. She has no standing here.
However, I'm worried about your fiance. Under no circumstances should he pay for anything out of pocket. It sounds like it's hundreds of thousands of dollars - assuming you wouldn't pay the full price and it's tens of thousands of dollars in cancellation fees, that's a huge chunk of change. Do not go into marriage having made a horrible financial decision like that.
This is a very, very extreme situation with your FMIL. You and your fiance need to be 100% aligned moving forward with how to handle it. If he's not on your side, I would say you need to think very carefully if marrying is the right option right now.
I can't believe how little these goons are paid to do this work. Like yea, it's hard to find a job, but you're willing to become the most hated people in America for under 100k?!?
