Nonstick pan, medium heat, small amount of oil/butter. Cover the pan with a tight fitting lid and cook about 3 minutes until done on top. If Im being honest, these are slightly over done.

Ideally, I like the yolks to remain bright yellow

Well, I too am American and I couldn't disagree any more, we enjoy all types of bread. From fresh Jewish rye from our local deli to homemade butter milk biscuits, they're all good.
