Hello, I've sent you a DM. I am sorry if it is long

There is no wrong points that you bring up. But for someone who has no musical background, looping melodies on a piano roll is a fundamental. If you cannot play piano or use instruments, and you only have access to a DAW, you would firstly need to learn the tools that you will be composing with.
As for why I say looping melodies is a fundamental, it's because of 3 things:
1. MIDI is the rawest form of composing on a computer
2. If you can nail simple looping melodies, a very basic form of music, you will build experience in fundamentals.
3. You'd learn and understand basic timing in music
There is a lot less to learn from ambience, there is also the fact that ambience does have a VST curb since it would be downright obnoxious to make ambience with a basic saw synth instead of a $200 Kontakt Library that nails ambience.
But the biggest reason I'd vouch for looping melodies is because it's manageable enough for even 13 year old me to start making music with.

I am an idiot, Bohemian Violin & Cello are for UVI player, not Kontakt^^^ It's extremely realistic sounding and can handle the nonsense I tend to throw at it...
These are all also pretty expensive and have plenty of decent cheap or free options. The big difference is that these will make your music sound expensive and very expressive, to the point where it's very difficult to tell the difference between a real orchestra and a virtual one

I'll drop the Kontakt sauce:
Soloist Strings:
- Bohemian Violin (Virharmonic)
- Bohemian Cello (Virharmonic)
- Soft String Soloists (Fracture Sounds)
Woodwinds:
- Emotive Woodwind Soloists (Fracture Sounds)
Strings:
- LA Scoring Strings 3 (Audiobro)
- Cinematic Studio Strings (Cinematic Studio Series)
Brass:
- Forzo Modern Brass (Heavyocity)
- Brass Band Soloists (Fracture Sounds)
Percussion:
- Symphony Series Percussion (Native Instruments)
Extra:
- Nordic Spheres (Sonuscore)

You make an incredibly strong point, but it may be a lot more beneficial to start with repeating chord progressions and melodies as a learning point alongside ambient soundscapes. But hey, now that I think about it, I suppose the first learning curb is getting to understand the tools, the DAW, the VST plugins and such.

To be honest, I sometimes find myself to be disappointed by the music that people who know music theory, make. I strongly suspect that it's the ability to hear your own music, as if you weren't the person who made it, as well as your actual ability to achieve whatever emotion that you seek. Music theory cannot teach you those 2 things, that's for sure, but it could be useful regardless.
Personally, I don't know a damn thing about music theory.

Why not! I'll send a DM

Researching how to use the piano roll could be a very strong start for you. Getting midi from other VGM that you can put into the piano roll to analyze is also very good (My skills have dramatically increased while learning the Chrono Trigger soundtrack). On top of that, you'll have to expose yourself to a wide, and I mean, wide variety of music too.

I have EDM tracks in the additional music section, and I am familiar with making stems and using the crossfading technique

I'll sort out some OSTs for you to assess soon!
Fellow composer here! You have a really wonderful style. I particularly like the first theme you put down
