If you want to avoid wifi, I would setup a Z-wave network just for the Honeywell thermostat line. They are z-wave, unlike most other smart thermostats. And they have been pretty well tested by the community at this point.

Sure z-wave stuff is a bit more expensive, especially on the sensor side of things. But I think the quality tends to be worth it. And you can get some good deals on it. The Zooz line of z-wave devices tends to go on sale every holiday at thesmartesthouse.com

Zooz stuff will cover most of what you are looking to do. In addition to the normal dimmers and smart plugs, they have fan controllers and high amperage switches. If you need a smart home controller, check out Hubitat. It supports both z-wave and zigbee devices.

Edit: I can't find a Zooz fan controller anywhere. Could have swore they sold one. Well, Leviton makes a z-wave one and Inovelli sells a zigbee canopy module.

Home Assistant can do this easily and for free. I wonder how many people are into home automation, have multiple rtsp cameras, but don't use Home Assistant? Of course you just spammed your vibe coded app across six different subreddits; so you might not even realize this is a home automation sub.

Well the internet is pretty fucking amazing when you think about it. I get to play board games and chat with friends in Germany and Serbia. I can watch movies together with pals from France and the Netherlands. It's great to see different cultures of the world readily available for anyone to experience. It can help counter some of the otherization that goes on in politics and the media.
