I'm an Indian person living in the US (didn't learn to cook before I moved here and had to learn since good Indian food wasn't available in my area) and have a lot of the books mentioned here:

- every Madhur Jaffrey book

- My Bombay Kitchen

- Pakistan by Maryam Jilani

- all of Asma Khan's books

- all of Meera Sodha's books

- plus another 70 Indian cookbooks

I think all of these are great (and I'm calling some out specifically since I'd recommend them), but the ones I've used most are:

- easy : One Spice, two spice - to add Indian flavors to American food , Indian-Ish

- favorites : Flavorwalla (not strictly Indian - more like fusion) , Tiffin, Dishoom
