The Utopia started as an April Fool's joke. Seagull said they were making a watch mounted so the back, not the front faced out because it was a greater work of art. Then it created so much interest they went ahead and made it anyway (a limited edition run)

The face is against your wrist. You have to take the watch off to read the time.

Look at Teensy 4. Their audio library and audio design tool are phenomenal. It's the Teensy variant of Arduino so it's C++ under the hood.

I'm retired. I don't do any of the activities you listed.

That's a beautiful watch (which is true of most things coming from Glashutte) but it's not Chinese (this is r/ChineseWatches)

I'd connect the camera to Sharpcap on a laptop or miniPC. You are unlikely to find a better lunar stacking solution than that in the Pro unlocked version of Sharpcap. (£14/year)

I bought a Sugess Moonphase for £130 ($175) that came on a nice quality steel bracelet (though the watch now looks better on blue leather)

You are confusing "camera" and "smartscope". In devices like Seestar and Dwarf the embedded astrophotography camera is just one component of the entire system. Alternatively you can buy similar cameras as just a separate unit that you then put together with your own choice of optical tube (telescope), tracking mount, controller electronics, automatic focusser and so on.

I recently switched from GW4 to a brand new Oppo X3 I got on eBay for £150 and it's a total revelation. Not only does the encoder button give a much easier to use user interface but I can go almost 5 days without charging it.

The only reason to stick with Samsung might be if your phone is also Samsung

Coincidentally I just watched this video tonight which talks about the current state of the (almost non-existent) British watch manufacturers...

I've been doing it about 18 months in. IMHO it's very good and I feel I have a pretty reasonable grasp now.

Even a second hand laptop from eBay for $50 would do a better job than any phone.

AliX (also consider an SMK37-Elite while you are there. It's an FM1 built into a keyboard MIDI controller)

Five M-Vave FM1's perhaps?

Obviously the Longines Master Chronograph Moonphase comes right in at your budget and delivers the moonphase you are looking for. It's a very classy looking watch. Only possible downside is it might be considered "too complex" which may detract from legibility.

I've often wondered why anyone would pay 4 or 5 times the price for an actual Seagull when they all appear to be ST1901 anyway.

What Seagull appear to do to make their's more attractive is keep issuing limited number variants like a maroon one recently and just now the back to front Utopia
