I would assume, based on experience, that incidentals like room service go on the card registered for incidentals while damages could go on the room rental card. But from a legal perspective, if they do 10k in damages and you sue them, where are you suing and how would you collect from a euro? If you are planning on paying their room, your better bet would be to make them put their card down for incidentals and, if you can swing it, either give them the money for their room or pay it some other way so your finances are not connected to it.
